It was amazing to be at the CL Christmas Fair this year and to meet all the talented people behind the scenes. My demo theme this year was ‘New Years Eve nibbles with a chef’s twist’. Covering 2 days I demonstrated, pink champagne granita, Waldorf panna cotta and parmesan beignets. I decided to demo these dishes as they seemed very fancy and complicated, however, they were very easy to execute which was perfect for a busy New Years Eve.
